Sweet Potato Brownies

Brownies..how I love thee. It’s only fitting that my inaugural recipe be a brownie one. I love, love, the chocolatey goodness of a dense brownie. These “healthier” brownies will not disappoint, trust me. No gluten, no nut, no dairy, no grain brownies! Secret ingredient? SWEET POTATO – it’s already sweet and once grated, incorporates nicely into the brownie mixture. There is no lingering taste, in case you are not a fan of sweet potato. I have tried orange zest before as a secret ingredient and you can definitely tell that something isn’t quite right  but this is not the case with sweet potato. Enjoy and let me know how you like it.

Ingredients:
• 2 cups – raw (medium size) sweet potato, peeled and grated
• ½ cup – coconut oil (slightly more to grease baking dish, if desired)
• ½ cup – honey
• 2 eggs
• 1 tsp – vanilla extract
• ¼ cup – raw cacao powder
• 2 tsp – baking powder
• 1 tsp – baking soda
• 2 tbsp – coconut flour
• handful of chocolate chips (I use Mega Chunks brand – dairy, nut, and soy free) – use a little or as much as you want, to taste

Instructions:
1. Preheat oven to 375 degrees
2. Lightly grease a baking dish (the bigger the dish, the thinner the brownies and vice versa) with cooking spray or coconut oil
3. In a large bowl, mix together prepped sweet potato, oil, honey, eggs, and vanilla extract until combined
4. Add the cacao powder, baking powder, and baking soda to above mixture. Mix well
5. Add the coconut flour and mix
6. Finally, toss in the chocolate chips and combine
7. Add mixture to baking dish and spread evenly
8. Bake for 25 minutes or until toothpick comes out clean
9. Let brownies cool to touch
10. Slice and enjoy!
